pickled ginger


1/2 cup vinegar (supposed to use rice, I use any)
1/2 cup sugar (I use Splenda)

Pickled ginger! Yum! Do you think apple cider vinegar would work for this? (I only have that or balsamic vinegar in my kitchen right now...)

Forgot to add, it needs to sit for a day or two in the fridge to get the pickled flavour.

Hello, I've never had pickled ginger though I have heard that ginger is good for you (antiinflammatory?) What kind of dishes do you use it in or do you eat it by itself?

I eat it on its own Shannon. It's a bit hot, sour and sweet and is pretty good at curbing a sweet tooth. I started eating ginger because it is supposed to be good for you, but I don't really know if there are significant health benefits to be had. I figure no harm done to eat a bit of ginger though. :)
